I've been making chocolate truffles for 3 or 4 years now, and I only make them in the cold Winter months when I can work in a room colder than 50*F. They're pretty darn tasty.
They can be either vegan (made with coconut milk and coconut cream) or not (made with local heavy cream from my farmers' market).
There's a ganache filling, which can have almost any flavor at all. Just some of the options include: tea (I have some interesting black teas, matcha, and a few herbal teas that I keep for company but aren't to my taste); curry/masala; lime & coconut; galangal & lemongrass; cardamom & black pepper; habanero; laurel (bay leaves); sage; chai ... - really, almost anything that's not too wet can be a flavor. I've even been considering fruit flavors using jam, but I haven't tried that yet.
And then there's a hand-dipped coating of even more chocolate! I try to match how light or dark the coating is to the flavors in the ganache, but I can also take requests.
Notes: I will mail to anywhere in the northern hemisphere (I've successfully mailed truffles to Europe and the UK, but I'm willing to try anywhere). The last auction I did, it did take me several weeks to find the time to make the truffles, but I will do my best to have them out in a timely fashion. I'm planning to make a lot of chocolate the last week of bidding, anyway, so I'll set aside some in case you aren't picky about flavors.
